Ingredients

  • 100gm dried lentils
  • 300gm white rice
  • 400gm quinoa

Dressing

  • 200ml water
  • Salt & pepper
  • 100ml Knorr Intense Flavours Citrus Fresh

To serve

  • 5 x avocados, sliced
  • 1kg baby heirloom tomatoes
  • 300gm red cabbage, thinly sliced and pickled
  • 1kg roasted beetroot
  • 500gm roasted pumpkin
  • 250gm snow peas sprouts, thinly sliced
  • 80gm alfalfa sprouts

Preparation

Bright, colourful and healthy, this veggie dish jumps off the plate.

  1. Cook quinoa, lentils and rice until tender, drain and rinse.
  2. Combine Knorr Intense Flavours Citrus Fresh, water and salt and pepper.
  3. Arrange all ingredients in a bowl and pour over dressing.
